HARVESTING THE COAST: A Culinary Excursion with Chef Aaron Bedard – featuring Ben Jacobsen of Jacobsen Salt & North Coast Artisans Sleepy Monk Coffee, Icefire Gallery & Cannon Beach Distillery

The Oregon Coast has inspired a new culinary movement: sea-farm-to-table.  Meet Ben Jacobsen and learn (and taste!) about his pioneering salt works, then experience a guided tour and tasting of North Coast artisans.  Plus, oyster shucking, beach front cocktails, glass making and more—culminating in a 5-course brine and dine feast with Jacobsen and Chef Aaron Bedard in the Stephanie Inn Dining Room.

$599 per person; limited to 10 guests of the Stephanie Inn

Full experience includes:

11:30am – 4pm:  The day kicks off with a sea salt inspired lunch at the Stephanie Inn with Master Salt Maker Ben Jacobsen sharing his personal story of building an artisan salt making operation in nearby Netarts Bay, whose products have become the seasoning choice by chefs from around the world.  Ben leads guests through a tasting of his salts accompanied by a beautiful summer lunch prepared by Chef Aaron Bedard.  From pure and pristine to smoky and citrus-tanged salts, you’ll enjoy Ben’s line-up, plus accompaniments of Bee Local Honey, also owned and produced by Jacobsen’s team, and learn how to use various flavors in home cooking and cocktails.

The group then heads to Sleepy Monk Coffee Roasters, organic roasters of the highest order, run by Cannon Beach locals who work as roasters, chefs and culinary collaborators.  Typically, you’ll know Sleepy Monk’s cafe for its line out the door, but today we’ll have a private guided visit at their separate roasting facility with owner Rachel and head roaster Aubrey, to taste the complex, nutty beans and blends from this coastal gem—and to drink a Jacobsen studded salty-sweet pick me up to fuel our next stop.

Next, we’ll experience Icefire Gallery, built from the remains of a salvaged shipwreck and airplane hangar, and home to coastal artists James Kingwall and Suzanne Kindland.  Inspired by the rippling water, ancient forests and ever changing light of the Oregon coast, these artists forge stunning glass art through fire and elegant craftsmanship.  James and Suzanne will interpret various pieces in their gallery, then demonstrate forging a glass piece before your eyes.

The afternoon experience finishes off with a curated tasting of local agave spirits at Cannon Beach Distillery with distiller Mike Selberg.  Mike ferments, matures, and bottles all of his award-winning line-up entirely from scratch, on site. Guests will hear Mike’s unique tale of distilling on the coast, and enjoy a tasting flight of his undeniably delicious, aromatic spirits.

4:00-5:45pm – Guest relaxation time

5:45-6:30 Salt, Oysters & Cocktails by the Sea

Nothing matches beach front scratch cocktails at the Stephanie Inn, with oysters on ice and Haystack Rock as the backdrop.  Cannon Beach Distillery’s Mike Selberg teaches guests how to make the perfect margarita, shaking up some agave spirits magic with Jacobsen Salt and Bee Local Honey.

6:30-pm – Harvesting the Coast Pairing Dinner in the Stephanie Inn Dining Room with Executive Chef Aaron Bedard and Ben Jacobsen

Join us in our elegant dining room for a collaborative sea-farm-to-table dinner with Chef Aaron and Ben Jacobsen, master salt maker at Jacobsen Salt, as your hosts.  Each course of this brine and dine feast will bring out the beauty of the sea and coastal farms, from fresh catch seafood to height of the season farm bounty, paired with a selection of stellar Oregon wines.  This 5-course pairing dinner is an experience to write home about.  Sojourns guests will be seated with artisans.

  • Your reservation will be confirmed via a confirmation letter email from our front desk staff.
  • Sojourns are not included in the price of your room.
  • Cancellation policy: Due to the high demand for these intimate, small group experiences, guests will be charged for the full price at time of reservation for the Sojourn experience. A 30-day notice is required for cancellation of the Sojourn experience.  Cancellations within 30 days are non-refundable.
